Cervecería Calavera
Gilbert Nielsen and Elizabeth Rosas began home brewing in Denmark, where they first put chiles in their beer, and moved to Mexico in 2008 to found Calavera in Ciudad Satélite, Naucalpan, in the State of Mexico. Its best-known beer is the Mexican Imperial Stout, brewed with British hops and four dried chiles: guajillo, chipotle, morita and ancho. The brewery says it was the first in Mexico to make seasonal beers for the Day of the Dead, Christmas and spring with Mexican ingredients. Tripel de Abadía and La Ofrenda are tripels, Buen Día a Belgian IPA and Sanctum a witbier; another line is infused with mezcal.
