Tsypa
Oleksandr Shatalov founded Tsypa in 2015 in Kvasy, a mountain village in the Rakhiv district of Zakarpattia, starting from his restaurant there. It brews with water from a local high-mountain spring, ferments in egg-shaped vessels, the source of its name (tsypa is a chick), and matures its beer for at least 30 days. The range runs from lager and weizen to IPA, stout and gose. In Forbes Ukraine’s 2026 ranking of small brewers it came fourth by volume, with 688,000 litres in 2025. On 9 October 2026 fire destroyed Shatalov’s Bokorash restaurant in Kvasy, where the brewery began.
