Cervecería Monstruo de Agua

A group of friends set up the Colectivo Axolote in Mexico City in 2013, and Monstruo de Agua was its first project; the name translates axolotl, the Nahuatl for water monster. Founder and head brewer Pablo Serrano led its work with wild yeast. By March 2025 it had made about 150 beers, meads and ciders with more than 100 Mexican-grown ingredients. Its signature beer, Blanca de Maguey, gets five of its seven points of alcohol from barley and two from fermented maguey sap, with bitter orange peel and coriander. It brews about 3,000 litres a month at Topilejo, in Tlalpan in the south of the city, and pours them at a taproom in Condesa.
