Cervecería Hércules
Cervecería Hércules opened in 2011 in the old El Hércules textile mill in Querétaro, founded by Cayetano Rubio in 1846 on the site of a 16th-century wheat mill. The twin brothers Luis and Carlos González founded it. Its brewers look to Europe more than to the United States: Czech, German and Austrian lagers, bocks, English ales, saisons, porters and wild beers, about 50 a year, with native maize in some recipes. República, named after the mill town’s old nickname of sister republic, is a Czech pils, and Spinning Jenny an English pale ale. Hércules has exported to the United States since 2019, opened a 1,200-seat beer garden in 2018 and a 40-room hotel in 2023.
