Cerveza Ceiba

Carlos A. Jaime founded Cervecería de Yucatán in Mérida to revive the local beer his grandparents’ generation drank, before Grupo Modelo bought Cervecería Yucateca in 1979 and moved its brewing away. The brewery gives 2012; a 2017 account says he started it with his sons Carlos and Mauricio in 2013. He named it after the ceiba, the tree sacred to the Maya. It began with a pilsner, a Vienna lager and a stout, brewed with German malt, Belgian hops and Yucatán groundwater, and runs a beer garden at the brewery. Jaime died in 2017. Ceiba is one of the two main producers among about 20 breweries in Mérida.
