Ca' del Brado
Four members of a Bologna home-brewing club opened Ca’ del Brado at Rastignano in 2016, and since 2021 they have brewed everything in-house. They call it a cantina brassicola, a beer cellar: about 80% of the beer matures in wood, mostly in barrels that held wine, with the brewery’s own yeast. The range runs from Invernomuto, a farmhouse ale, and Nessun Dorma, an old-style saison, to Zena, a wild gose, and grape ales made with Lambrusco Grasparossa, Centesimino and Grechetto Gentile grapes. It brewed 500 hectolitres in 2025.
